Easy Recipes: Chicken and Chorizo Al Forno

Need an extremely tasty dinner that will wow the family without breaking the bank? Try this tasty chicken and chorizo bake and prepare for a flavour explosion!

Chicken and Chorizo al Forno is easy to make and guaranteed to please. It's perfect with JJ skinless, boneless chicken breast or thigh fillets, which come in convenient 1kg packs.

This ultra indulgent meal takes just 45 minutes to make a serves for hungry adults or two adults, two children a some leftovers for the freezer!


• 1kg fresh halal JJ chicken breast or thigh, cubed

• 1 ring of chorizo, sliced

• 3 x tbsp smoked paprika

• 500g cherry tomatoes

• 1 chopped red pepper (optional)

• 2 tbsp tomato puree

• Grated and sliced mozzarella

What to do...

– Heat 3 tbsp of olive oil in a pan with the paprika.

– Stir the chicken through until it's well coated and beginning to brown.

– Add the tomato puree and stir for three or four minutes

– Add the chopped pepper and cherry tomatoes. Stir for a few more minutes

– Finally, add the chorizo and stir for another few minutes, until the chorizo is releasing its oils and starting to form a rich sauce

TIP: Not a fan of chorizo? Supplement it for some extra tasty sausages or try Turkish Sucuk

– Simmer for 10-15 minutes then stir through cooked gnocci or regular pasta

– Spoon into individual ramekins or a large oven dish

– Top with grated and sliced mozzarella and place into a pre-heated oven at 180 degrees (fan assisted) for 15 minutes until the cheese is bubbling and crispy on top

– Serve with an optional fresh salad and enjoy!
